Description

Beautiful beets color this tasty pesto that is a fine appetizer on crackers or a filling sandwich in pita pockets.

Ingredients

  • 1 lb beets, cooked
  • 2 clv Garlic
  • 1⁄2 c cilantro or basil
  • 1 T balsamic vinegar
  • 1 c undefined
  • 1 c olive oil
  • 1 pn salt, to taste

Instructions

Mix all ingredients in a food processor.

Serve with crackers or in pita pockets.
