Summer Fennel Salad

Description
A refreshing Summer Salad.
Ingredients
- 1 bn 1 head of fennel Sliced
- 1 c Green Pepper Sliced
- 1 c Cucumber Sliced
- 1 c Tomatoes Diced
- 3 T Cider Vinegar
- 1 T Vegetable Oil
- 1 T Lemon Juice
Instructions
In a medium bowl add vinegar, oil, and lemon juice. Mix well and add sliced vegetables. Toss vegetables with oil mixture until coated. Refrigerate for at least one hour and serve cold.
Notes
This salad is great with any vegetables you have - add whatever you have in the garden.
