Green Beans with Basil and Mint

Description
Refreshing and easy. Great summer salad.
Ingredients
- 1 lb green beans, trimmed
- 1 clv garlic, minced
- 1⁄3 c basil, chopped
- 1⁄4 c mint, chopped
- 1 small sweet pepper, chopped
- 1 T olive oil
- 1 pn coarse salt
Instructions
In a glass dish, cover bottom with water, add beans and garlic and microwave on high for 3 to5 minutes, until crisp-tender. Rinse with cold water and drain.
Meanwhile, in a large bowl, combine remaining ingredients. Add drained beans and garlic. Toss and serve.
