Exotic Baked Chicken

Description

A chicken dish with a nice kick.

Ingredients

  • 4 Chicken Breasts
  • 1 cn Diced tomatos
  • 3 sticks celery chopped
  • 1 Green or Yellow pepper Chopped
  • 1⁄4 red pepper chopped
  • 2 clv Garlic
  • 1 t Ginger
  • 1⁄2 Onion Chopped
  • 1 pn Salt
  • 1 Patato cubed with skin on

Instructions

Place Chicken Breasts in a 9” X 13” foil-lined baking dish (heavy-duty foil—enough to completely wrap the chicken and seal it tightly during baking) Coat foil on the inside with cooking spray or oil before adding chicken.

Mix ingredients in a bowl and pour over the chicken.

Bake dish at 400 degrees for 30 minutes. Then reduce temperature to 350F degrees and bake for 20 more minutes.
