Delicious and Fancy!

Ingredients

  • 1 large red cabbage
  • 1 green pepper, deseeded and chopped
  • 1⁄2 pineapple, cored and chopped
  • 2 oranges, cara cara oranges or tangelos, segments cut in half
  • 1 c finely chopped red onion
  • 3 stalks celery, chopped
  • 1⁄2 c walnut pieces or sliced almonds
  • 1⁄2 c sprouted lentils or sunflower sprouts

Instructions

To use cabbage as a bowl, cut with a sharp knife and scoop out the center of the cabbage, leaving 1/4 inch for the shell.

Take remaining cabbage and chop very fine. In a large bowl, mix all ingredients except walnuts.

Stir in dressing and refrigerate for an hour or overnight.

When ready to serve, stir in walnuts and sprouts.

Dressing:
1/2 cup plain yogurt
1 Tbsp cider vinegar
Salt and Pepper to taste
